Several small studies have measured lower post-meal glucose peaks when carbohydrate is eaten last rather than first. The effect sizes are modest and consistent enough to be worth adopting, particularly given the price.

Why It Plausibly Works

Gastric emptying slows. Protein and fat arriving first slow the rate at which the stomach releases its contents, so the carbohydrate that follows is delivered more gradually.

Gut hormones respond earlier. Protein and fat trigger the release of hormones that influence insulin response and satiety before the glucose load arrives.

Fibre gets there first. Vegetables eaten at the start put fibre in place ahead of the starch, which is the same principle as eating carbohydrate in a less processed form.

The Honest Limits

The studies are small. Most involve modest numbers of participants over short periods, and several are in people with existing glucose problems rather than in healthy adults.

It is not a substitute for what is on the plate. Reordering a plate of white bread and jam produces a smaller effect than not making that plate. Sequence is a refinement, not a replacement for composition.
